Moves the built-in defaults for GET /versions (in main.rs and compose.yaml) to the new client release: 0.1.2-beta is supported, and 0.1.1-beta is deprecated, so it still connects but shows a notice to update. 0.1.2-beta changes nothing the server relies on.

The live values come from SUPPORTED_VERSIONS and DEPRECATED_VERSIONS in Coolify, which need the same change.
